When served chilled, Finn Hill Blondie 2018 offers a very delicate nose with faint aromas of fruit basket, wet stones, and even a touch of fresh straw and brine. As the wine warms, ground coriander makes a cameo. The early palate leaps with bright red fruit such as sour cherry, tart raspberry. The mid-palate develops into a firm minerality with notes of flint and saline. The late palate and whistle-clean finish reveal the subtle vanilla sweetness at the heart of this food-friendly rose. Pair with roast beets and goat cheese, seared scallops, or spicy chicken teriyaki.
